National Tatar junk food

Peremyach is one of the most popular dishes of Tatar cuisine.

In every corner of Kazan a hungry rasserby can easily find and enjoy an ochpochmac (a triangular-shaped pastry) or peremyach. Youth of the city aptly dubbed this high-calorie pie „Tatar junk food”.

At the time when ancestors of the Tatar had not professed Islam, peremyach had beed regarded as the personification of the Sun. As is known, Tengri was the supreme deity - the god of heaven. And how come the sky without the sun? So gathers of peremyach form a sort of solar rays.

Tatar imagine a round patty stuffed with meat and slabber when hear the word „peremyach”. But in fact, peremyach can be with a variety of fillings. There a lot of kinds of peremyach known in Tatar cuisine: stuffed with potato, open one, groom-special and much more different kinds.

There is nothing tricky in cooking. The most important thing is a good soft yeasted dough. It is divided into small pieces which are rolled out into circles. Prefabricated filling, for example minced meat with choped onion, is put in the center. Then form the dough around th stuffing so that there”s a small hole in the middle with rays dispersed from it. The boiling oil will get inside the patty through this hole so the filling to be done. Peremyach is fried in the boiling oil.

In many regions of Russia celebrations assctiated with peremyach are organized. For example, „Peremyach-party” in Khabarovsk. Far Eastern Tatar amazed Khabarovsk chefs with Tatar peremyach.

Indeed peremyach is very tasty. It is impossible to abandon from piping hot peremyach even if you are not hungry. It represents Tatar people, it is the dish of Tatar cuisine that reflects the history and traditions of Tatar people.
